The Best Salad in the World

Happy post-Thanksgiving everyone! I've had a bit of time off from school and managed to get a few pictures snapped here and there. Be sure to check back for a recap of Pie-stravaganza 2009.

There aren't too many salads that get me excited, but this happens to be one of them. I was put in charge of lunch that utilized leftovers and when I saw the key ingredient in the fridge (gorgonzola!), I knew that it was meant to be.

Quantities are up to you... use as little or as much as you like. For the dressing, I like to put a splash of extra virgin olive oil and half a splash of balsamic vinegar in the salad tossing bowl with some salt, pepper, and a bit of dried oregano. Whisk together then toss with your lettuce.

The Best Salad in the World (aka Apple Gorgonzola Salad)
...Now With Turkey!

Lettuce
Dressing (Recommendation: Balsamic Vinaigrette)
Apple, chopped, such as Granny Smith or Fuji
Crumbled gorgonzola cheese
Dried cranberries
Red onion, thinly sliced
Leftover Thanksgiving turkey
Salt and pepper
(If you're feeling fancy, throw a few almonds, pecans, or walnuts in the mix, as well)
Toss lettuce with dressing. Top with toppings. Sprinkle a little salt and pepper on the turkey. Eat a large quantity.
